Spaghetti sauce is a great way to preserve a tomato harvest without canning. Marinara dries into a deep red sheet that grinds into powder; meat sauce dries into chunky crumbles. Both rehydrate into sauce in minutes.
Jarred sauce works too. Olive oil in the sauce adds a little fat; skim what you can.
Prep and loading
- Simmer sauce until thick. Thinner sauce means more water to remove.
- For meat sauce, use lean meat and skim fat.
- Spread ⅜ inch deep, pre-freeze, and dry.
- Weigh portions before drying if you want measured bags.
How to tell it’s done
- The sheet is brittle and snaps; meat pieces are hard.
Not sure? The weight check compares two weighings and the expected dry weight for spaghetti sauce.
Problems and fixes
Leathery instead of crisp
Not fully dry or too thick. Spread thinner and add time.
Rehydrating and storing
Rehydrate: Hot water to the original weight; simmer 5 minutes. By weight, 100 g of dried spaghetti sauce takes back about 646 g of water to return to fresh weight; the rehydration calculator does any amount.
Store: Mylar or jars with oxygen absorbers.
Ways to use it
- Pasta night
- Pizza sauce
- Backpacking pasta with dried pasta and cheese
How much fits per batch
At a normal single layer, spaghetti sauce load at roughly 2.4 lb of fresh food per square foot of tray. That works out to:
| Machine | Fresh per batch | Dried per batch |
|---|---|---|
| Harvest Right Countertop 360 | 6.0 lb | 12.8 oz |
| Harvest Right Small | 7.2 lb | 15.5 oz |
| Harvest Right Medium | 11.3 lb | 1.51 lb |
| Harvest Right Large | 18.4 lb | 2.47 lb |
| Harvest Right X-Large | 37.5 lb | 5.03 lb |
