How to freeze-dry cooked pasta

Small cooked pasta shapes freeze-dry into quick-cook pasta for camping and fast meals. Cook it al dente; it softens more on rehydration.

Dry pasta already stores well, so freeze-drying plain pasta is mainly about speed and fuel: it rehydrates in boiling water in minutes instead of boiling for ten. That matters on a backpacking stove.

Small shapes like elbows, rotini and orzo work best. Long noodles break and tangle.

Prep and loading

  1. Cook pasta a minute short of al dente. Rinse in cold water and drain well.
  2. Toss with a few drops of oil only if needed to stop sticking.
  3. Spread ½ inch deep.
  4. Pasta dishes with sauce (mac and cheese, pasta with meat sauce) can be dried whole; see the lasagna and spaghetti sauce pages.

How to tell it’s done

  • Pasta is hard and brittle through the thickest part.

Not sure? The weight check compares two weighings and the expected dry weight for cooked pasta.

Problems and fixes

Mushy pasta

It was cooked fully before drying. Undercook it slightly.

Rehydrating and storing

Rehydrate: Boiling water, covered, 5–10 minutes. By weight, 100 g of dried cooked pasta takes back about 155 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Mylar with oxygen absorbers.

Ways to use it

  • Backpacking meals
  • Quick mac and cheese with cheese powder
  • Soups

How much fits per batch

At a normal single layer, cooked pasta load at roughly 2 lb of fresh food per square foot of tray. That works out to:
