Casseroles are where freeze-drying starts to feel like magic: a pan of lasagna becomes shelf-stable single servings. Layered dishes are dense and include cheese, so they run longer than most foods and should be cut thin.
Enchiladas, shepherd’s pie, mac and cheese and baked ziti all work the same way.
Prep and loading
- Bake, cool, and refrigerate overnight so slices hold together.
- Cut into ½ to ¾ inch thick slabs, or 1 inch cubes.
- Lay flat on lined trays with small gaps.
- Pre-freeze.
How to tell it’s done
- The thickest slab is dry and crumbly in the center; noodles snap.
Not sure? The weight check compares two weighings and the expected dry weight for lasagna.
Problems and fixes
Cheese layer stayed chewy
Thick slabs. Cut thinner and blot surface fat.
Rehydrating and storing
Rehydrate: Pour hot water over, cover 10–15 minutes. By weight, 100 g of dried lasagna takes back about 223 g of water to return to fresh weight; the rehydration calculator does any amount.
Store: Mylar with oxygen absorbers, one serving per bag. Cheese-heavy dishes keep a year or two, not decades.
Ways to use it
- Ready meals
- Meals for new parents or neighbors
- Hunting and camping
How much fits per batch
At a normal single layer, lasagna load at roughly 2.4 lb of fresh food per square foot of tray. That works out to:
| Machine | Fresh per batch | Dried per batch |
|---|---|---|
| Harvest Right Countertop 360 | 6.0 lb | 1.85 lb |
| Harvest Right Small | 7.2 lb | 2.24 lb |
| Harvest Right Medium | 11.3 lb | 3.48 lb |
| Harvest Right Large | 18.4 lb | 5.71 lb |
| Harvest Right X-Large | 37.5 lb | 11.60 lb |
