Mashed potatoes dry into crisp sheets that crumble into flakes, and they rehydrate in about a minute with hot water. Because you started with real potatoes, they taste like real mashed potatoes rather than the boxed kind.
Butter and cream are fat, and fat limits storage. Make them with milk and a little butter, then add the rich stuff when you serve them.
Prep and loading
- Make mashed potatoes with milk and minimal butter. Season lightly.
- Spread ½ inch deep on lined trays.
- Dry, then crumble into flakes or blend into powder.
How to tell it’s done
- The sheet is dry and crisp with no soft spots in the middle.
Not sure? The weight check compares two weighings and the expected dry weight for mashed potatoes.
Problems and fixes
Gluey after rehydrating
Overworked potatoes or too much stirring. Stir gently and stop once smooth.
Rehydrating and storing
Rehydrate: Stir in hot water until smooth; add butter fresh. By weight, 100 g of dried mashed potatoes takes back about 362 g of water to return to fresh weight; the rehydration calculator does any amount.
Store: Mylar or jars with oxygen absorbers.
Ways to use it
- Side dish
- Shepherd’s pie topping
- Thickening soups
- Camping meals
How much fits per batch
At a normal single layer, mashed potatoes load at roughly 2.4 lb of fresh food per square foot of tray. That works out to:
| Machine | Fresh per batch | Dried per batch |
|---|---|---|
| Harvest Right Countertop 360 | 6.0 lb | 1.29 lb |
| Harvest Right Small | 7.2 lb | 1.57 lb |
| Harvest Right Medium | 11.3 lb | 2.44 lb |
| Harvest Right Large | 18.4 lb | 3.99 lb |
| Harvest Right X-Large | 37.5 lb | 8.12 lb |
