Grapes combine the two things freeze dryers handle worst: a tough skin that blocks vapor and a lot of sugar. Whole grapes can run for days and still come out chewy. Halving every grape is not optional.
Once halved and given time, they turn into crunchy, sweet shells that taste like a cross between a raisin and a sour candy. Concord and other strongly flavored grapes are especially good.
Prep and loading
- Rinse, stem and dry the grapes.
- Halve each one lengthwise. A trick for speed: sandwich grapes between two plastic lids and run a long knife between them.
- Place cut side up so juice stays in the fruit.
- Load lightly and pre-freeze.
How to tell it’s done
- Halves are hollow and crunchy, not gummy.
- They rattle in a jar.
Not sure? The weight check compares two weighings and the expected dry weight for grapes.
Problems and fixes
They look like raisins
Whole grapes or grapes cut too late. The skin kept water in. Halve them before loading.
Gummy centers after 40 hours
Very sweet grapes and a full tray. Add time, and load less next round.
Rehydrating and storing
Rehydrate: Eaten dry. By weight, 100 g of dried grapes takes back about 411 g of water to return to fresh weight; the rehydration calculator does any amount.
Store: Mylar or jar with an oxygen absorber.
Ways to use it
- Snacking
- Cheese boards
- Crushed into frosting for a grape flavor
How much fits per batch
At a normal single layer, grapes load at roughly 2.6 lb of fresh food per square foot of tray. That works out to:
| Machine | Fresh per batch | Dried per batch |
|---|---|---|
| Harvest Right Countertop 360 | 6.5 lb | 1.27 lb |
| Harvest Right Small | 7.8 lb | 1.53 lb |
| Harvest Right Medium | 12.2 lb | 2.39 lb |
| Harvest Right Large | 20.0 lb | 3.92 lb |
| Harvest Right X-Large | 40.6 lb | 7.96 lb |
