Hard candy contains almost no water, so it relies entirely on heat and vacuum: the candy has to soften enough to bubble and expand. When it works, Jolly Ranchers turn into glassy, airy bubbles. When the shelf is too cool, they come out unchanged.
Owners report very mixed results. Newer machines with candy mode and higher shelf temperatures do best. Start with a handful before committing a tray.
Prep and loading
- Unwrap and space widely. They spread as they melt and puff.
- Use a silicone mat or parchment; melted candy sticks to bare trays.
- Run candy mode with the highest shelf temperature your manual allows for candy.
How to tell it’s done
- Pieces are expanded and brittle-airy, not glassy and solid.
Not sure? The weight check compares two weighings and the expected dry weight for hard candy.
Problems and fixes
Nothing happened
Shelf not hot enough. Hard candy needs more heat than chewy candy.
Melted into puddles
Too hot or too long. Try a lower temperature or shorter run.
Rehydrating and storing
Rehydrate: Not rehydrated.
Store: Sealed pouches; very sensitive to humidity.
Ways to use it
- Novelty candy
- Market sales once you have a reliable setting
How much fits per batch
At a normal single layer, hard candy load at roughly 0.8 lb of fresh food per square foot of tray. That works out to:

| Harvest Right Countertop 360 | 2.0 lb | 2.03 lb |
| Harvest Right Small | 2.4 lb | 2.46 lb |
| Harvest Right Medium | 3.8 lb | 3.83 lb |
| Harvest Right Large | 6.2 lb | 6.28 lb |
| Harvest Right X-Large | 12.5 lb | 12.76 lb |
