How to freeze-dry raspberries

Raspberries are hollow, so they dry whole and fast. Handle them gently, load a single layer, and expect some crumbs.

Raspberries are one of the easiest fruits to freeze-dry. Each berry is a ring of small drupelets around a hollow center, so vapor has a short path out and there is no skin to break. Whole berries finish faster than sliced strawberries.

They come out bright, intensely tart and very fragile. Expect a layer of red crumbs at the bottom of every bag, which is not a loss: raspberry powder is one of the most useful things a freeze dryer makes.

Prep and loading

  1. Don’t wash raspberries until just before loading, and then only a quick rinse in a colander.
  2. Let them drain on a towel, cavity side down, so water does not sit inside the hollow.
  3. Place them in a single layer, open side down. They bruise easily, so don’t pour them from height.
  4. Frozen raspberries from the store work very well and save the prep.

How to tell it’s done

  • A berry crushes to dry crumbs between your fingers.
  • No dark, wet spots where drupelets touch the liner.

Not sure? The weight check compares two weighings and the expected dry weight for raspberries.

Problems and fixes

Lots of broken berries

That is the nature of raspberries. Pack them in a rigid container instead of a bag if you want them whole, and keep the crumbs for powder.

The bottoms stayed damp

Water was trapped in the hollow centers. Drain them cavity down before loading or use frozen berries.

Rehydrating and storing

Rehydrate: Best dry. They turn to mush if soaked. By weight, 100 g of dried raspberries takes back about 593 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Jar or rigid container with an oxygen absorber for whole berries; mylar for powder.

Ways to use it

  • Powder for frosting, macarons and white chocolate
  • Topping for yogurt and oatmeal
  • Folded into white chocolate bark
  • Crushed into lemonade or sparkling water

How much fits per batch

At a normal single layer, raspberries load at roughly 1.6 lb of fresh food per square foot of tray. That works out to:
