How to freeze-dry cranberries

Fresh cranberries have tough skins like blueberries. Halve or blanch them, and expect a very tart, unsweetened result.

Unlike the sweetened dried cranberries in the store, home freeze-dried cranberries contain only the berry. They are crunchy and very tart, which makes them better as an ingredient than a snack.

Their skins are thick and waxy, so the same rule as blueberries applies: break the skin or wait a very long time.

Prep and loading

  1. Rinse and sort out soft berries.
  2. Halve each berry, or blanch in boiling water until the skins just pop, then cool in ice water and drain.
  3. Spread on a lined tray. Halved berries can sit cut side up.
  4. If you want sweet ones, toss with a little sugar or juice concentrate before loading; this slows drying.

How to tell it’s done

  • Berries are hollow and shatter when pressed.

Problems and fixes

Chewy berries

Intact skins. Halve or blanch next time.

Too sour to snack on

That is unsweetened cranberry. Use it in baking, sauces and trail mix with sweeter fruit.

Rehydrating and storing

Rehydrate: Simmer in sauce or bake in; no soak needed. By weight, 100 g of dried cranberries takes back about 646 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Mylar or jar with an oxygen absorber.

Ways to use it

  • Holiday sauce, cooked straight from dry
  • Scones and muffins
  • Trail mix with chocolate
  • Powder for tart frosting

How much fits per batch

At a normal single layer, cranberries load at roughly 2 lb of fresh food per square foot of tray. That works out to:

Harvest Right Small6.0 lb12.9 oz
