How to freeze-dry oranges

Orange slices with or without the peel freeze-dry well. Peeled slices for snacking, unpeeled rounds for drinks and garnish.

Citrus is acidic and juicy, and the membranes between segments slow drying a little, but oranges still freeze-dry nicely. Peeled slices make a sweet, tangy snack. Unpeeled rounds keep their stained-glass look and are popular for cocktails, tea and holiday decor.

Mandarins and clementines can be dried as whole segments if you nick each segment so vapor can escape.

Prep and loading

  1. Wash well if you are keeping the peel.
  2. For snacking, peel and slice crosswise ¼ inch thick; for garnish, slice whole oranges ¼ inch thick.
  3. For segments, cut a small slit in each one.
  4. Lay flat on a lined tray. Juice will pool, so drain slices briefly on a towel first.

How to tell it’s done

  • Slices snap and the pith is dry and papery.
  • Segments are hollow and crisp.

Not sure? The weight check compares two weighings and the expected dry weight for oranges.

Problems and fixes

Peel stayed leathery

Peel is denser than flesh. Slice thinner or add a few hours.

Bitter taste

The pith concentrates when dried. Peeled slices taste sweeter.

Rehydrating and storing

Rehydrate: Eaten dry, or dropped into drinks. By weight, 100 g of dried oranges takes back about 646 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Jar or mylar with an oxygen absorber.

Ways to use it

  • Snacking
  • Drink garnish and tea
  • Powder for baking and frosting
  • Holiday decorations

How much fits per batch
