How to freeze-dry zucchini

Zucchini is the classic garden glut. Shred it for zucchini bread later, or slice and season it for crisp chips.

Every zucchini plant overproduces. Freeze-drying turns a mountain of it into a bag that weighs almost nothing, since it is about 95% water.

Shredded zucchini is the most useful form. Weigh the fresh shreds before drying and write the weight on the bag; when you bake, rehydrate back to that weight and squeeze out the excess as you would with fresh.

Prep and loading

  1. Wash and trim. Shred, or slice ¼ inch thick.
  2. No blanching needed for shreds you will bake with; blanch slices 1 minute if you want them for soups.
  3. Spread shreds loosely, slices in a single layer.
  4. Season slices with salt and spices for chips.

How to tell it’s done

  • Shreds are crisp and fluffy; slices snap.

Not sure? The weight check compares two weighings and the expected dry weight for zucchini.

Problems and fixes

Zucchini bread came out wet

Too much water when rehydrating. Rehydrate to the fresh weight on the bag, then squeeze in a towel like fresh zucchini.

Rehydrating and storing

Rehydrate: Shreds: soak, squeeze, use in baking. Slices: add to soups. By weight, 100 g of dried zucchini takes back about 1840 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Mylar with an oxygen absorber. Label the fresh weight on bags of shreds.

Ways to use it

  • Zucchini bread and muffins
  • Chips
  • Soups and sauces

How much fits per batch

At a normal single layer, zucchini load at roughly 2 lb of fresh food per square foot of tray. That works out to:

Harvest Right Small6.0 lb5.0 oz
Harvest Right Medium9.4 lb7.7 oz
