How to freeze-dry pumpkin

Pumpkin puree dries into a light orange powder that becomes pie filling with a little water. Canned pumpkin works perfectly.

Pumpkin puree is a near-perfect freeze dryer food: smooth, evenly thick and low in fat. Canned pumpkin needs no prep at all. Homemade puree from roasted pie pumpkins or butternut squash works the same way.

The dried sheets break and grind into powder that rehydrates in a minute. That makes pumpkin bread and pie possible any time of year, and a can’s worth takes up a small jar.

Prep and loading

  1. Use plain canned pumpkin, not pie filling, or roast and puree fresh pumpkin.
  2. Spread ½ inch deep on lined trays. Smooth with an offset spatula.
  3. Pre-freeze; puree spills when sliding trays in.

How to tell it’s done

  • The sheet is dry and crisp all the way through, including the center of the tray.

Not sure? The weight check compares two weighings and the expected dry weight for pumpkin.

Problems and fixes

Damp patch underneath

Spread was too thick in the middle. Keep it even at ½ inch, or flip the sheet and dry longer.

Rehydrating and storing

Rehydrate: Mix powder with water to puree consistency. By weight, 100 g of dried pumpkin takes back about 870 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Powder in jars, sheets in mylar, with oxygen absorbers.

Ways to use it

  • Pie and pumpkin bread
  • Pumpkin spice drinks
  • Soups
  • Dog treats (plain pumpkin)

How much fits per batch

At a normal single layer, pumpkin load at roughly 2.6 lb of fresh food per square foot of tray. That works out to:
