How to freeze-dry green beans

Green beans freeze-dry well for cooking but are not a great snack. Blanch them, cut them short, and use them in soups and casseroles.

Eat straight from the bag?No: cook or rehydrate

Green beans are a garden staple that freeze-dries reliably. They rehydrate tender rather than crisp, which makes them excellent in casseroles, soups and stir-fries and a bit disappointing on their own. Plan to cook with them.

Blanching matters here. Unblanched beans keep enzyme activity that dulls color and flavor over months of storage.

Prep and loading

  1. Wash, trim the ends and cut into 1 inch pieces.
  2. Blanch for 3 minutes, chill in ice water, drain well.
  3. Spread in a single, loose layer; beans are light and fill a tray before they hit full weight.
  4. Frozen cut green beans work without blanching.

How to tell it’s done

  • Pieces snap cleanly and are pale green throughout.

Not sure? The weight check compares two weighings and the expected dry weight for green beans.

Problems and fixes

Beans rehydrated squeaky and tough

They needed more simmering. Add them to soup earlier, or soak in hot water for 10 minutes first.

Dull, olive color

Under-blanched or over-blanched. Stick to 3 minutes and cool fast.

Rehydrating and storing

Rehydrate: Simmer 5–10 minutes in soups or casseroles. By weight, 100 g of dried green beans takes back about 870 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Mylar or jar with an oxygen absorber.

Ways to use it

  • Green bean casserole
  • Soups and stews
  • Stir-fries

How much fits per batch

At a normal single layer, green beans load at roughly 1.8 lb of fresh food per square foot of tray. That works out to:
