How to freeze-dry mushrooms

Sliced mushrooms dry fast and rehydrate well. Sauté first for better texture, or dry raw and grind for umami powder.

Mushrooms are mostly water and air, so they dry quickly and shrink to almost nothing. Raw slices rehydrate a bit spongy; sautéing them first in a dry pan or with very little oil gives a firmer, more savory result.

Mushroom powder is one of the best things you can make with a freeze dryer. A spoonful deepens soups, gravies and rubs.

Safety: Only dry mushrooms you are certain are edible. Drying does not make a toxic mushroom safe, and dried wild mushrooms are harder to identify.

Prep and loading

  1. Wipe or quickly rinse and dry. Do not soak.
  2. Slice ¼ inch thick.
  3. Optional: sauté in a hot dry pan until they release their liquid, then cool.
  4. Spread in a single layer.

How to tell it’s done

  • Slices are crisp and snap; thick stems are dry through.

Not sure? The weight check compares two weighings and the expected dry weight for mushrooms.

Problems and fixes

Spongy texture

Raw mushrooms rehydrate soft. Sauté before drying, or use them in sauces where texture matters less.

Rehydrating and storing

Rehydrate: Warm water 10–15 minutes; save the soaking liquid. By weight, 100 g of dried mushrooms takes back about 1113 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Jar or mylar with an oxygen absorber.

Ways to use it

  • Mushroom powder
  • Risotto and soups
  • Gravies
  • Omelets

How much fits per batch

At a normal single layer, mushrooms load at roughly 1.6 lb of fresh food per square foot of tray. That works out to:
