How to freeze-dry cantaloupe

Cantaloupe cubes turn into soft-crunch, sweet bites. Scrub the netted rind well before cutting.

Cantaloupe freeze-dries into airy orange cubes with a sweeter, more concentrated melon flavor than fresh. It holds its shape better than watermelon and is slightly quicker because the flesh is denser.

The netted rind is the one thing to take seriously. It traps soil and has been linked to Listeria and Salmonella outbreaks. Scrub it before the knife goes through.

Safety: Keep cut melon refrigerated until loading. FDA recommends scrubbing melon rinds with a produce brush before cutting.

Prep and loading

  1. Scrub the rind with a clean produce brush under running water and dry it.
  2. Halve, scoop the seeds, slice off the rind and cut ½ inch cubes.
  3. Spread on a lined tray in a single layer.
  4. Honeydew is handled the same way.

How to tell it’s done

  • Cubes are crisp and pale orange in the center.
  • No soft, cool cores.

Not sure? The weight check compares two weighings and the expected dry weight for cantaloupe.

Overripe melon or warming before freezing. Use firm-ripe melon and pre-freeze.

Rehydrating and storing

Rehydrate: Eaten dry. By weight, 100 g of dried cantaloupe takes back about 870 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Mylar or jar with an oxygen absorber.

Ways to use it

  • Snacking
  • Trail mix
  • Crumbled on yogurt

How much fits per batch

At a normal single layer, cantaloupe load at roughly 2.3 lb of fresh food per square foot of tray. That works out to:
