How to freeze-dry beans

Cooked or canned beans freeze-dry into instant beans that rehydrate in minutes instead of soaking overnight. Black, pinto, kidney and refried beans all work.

Dry beans store forever, but they take hours to cook. Freeze-dried cooked beans take ten minutes. That makes them one of the most practical storage foods for quick meals, hiking and emergencies.

Canned beans are the shortcut: drain, rinse and load. Refried beans can be spread like a puree and dry into a powder that becomes bean dip with hot water.

Prep and loading

  1. Cook dried beans until tender, or drain and rinse canned beans.
  2. Pat dry with towels.
  3. Spread about ½ inch deep.
  4. Refried beans: spread ⅜ inch on a lined tray.

How to tell it’s done

  • Beans are hard, light and crack when squeezed.
  • Some skins split; that is normal and helps rehydration.

Not sure? The weight check compares two weighings and the expected dry weight for beans.

Problems and fixes

Some beans still chewy after rehydrating

Use boiling water and cover the bowl; give them 10 minutes.

Rehydrating and storing

Rehydrate: Hot water 5–10 minutes. They become “instant beans”. By weight, 100 g of dried beans takes back about 185 g of water to return to fresh weight; the rehydration calculator does any amount.

Store: Mylar or jars with oxygen absorbers.

Ways to use it

  • Burritos and tacos
  • Chili
  • Bean soup
  • Bean dip

How much fits per batch

At a normal single layer, beans load at roughly 2.8 lb of fresh food per square foot of tray. That works out to:

Harvest Right Small8.4 lb2.96 lb
